Chicha Morada

Chill Time: about 4 hours
1 medium Pineapple- about 3 pounds
16 cups Water
6 ounces Purple Corn- Dried
3 Cinnamon Sticks
10 Cloves- Whole
½ cup Sugar
2 Tablespoons Lime Juice
2 Tablespoons Sour Orange Juice (optional)
1 Green Apple- Diced for garnish
Thoroughly wash the pineapple using a soft brush.
Peel the pineapple and save the meat for snacking or another recipe.
Rinse the dried corn.
Place the corn in a large pot and cover with 16 cups of water.
Simmer for 30 minutes.
Add the pineapple, cinnamon and cloves.
Simmer for 30 minutes to 1 hour depending on your tastes. I recommend tasting after 30 minutes and then every 10 minutes until the desired taste is achieved.
Stir in sugar until dissolved.
Strain and chill.
Add lime juice and sour orange juice.
Garnish with green apples, lime and orange wedges.
The fun part: I personally do not like very sweet drinks. Feel free to experiment with the amount of sugar you add. Play around with different citrus fruits, and warm spices like cardamom or anise to make something entirely new and uniquely you.
