Ginger Lime Agave Salad Dressing

Starting with fresh lime juice, slowly drizzle in olive oil while whisking. This will disperse the oil in the acid and will thicken the dressing. This is called an emulsion. That's the secret! Then add your ginger, agave and salt. whisk. Customize this recipe and add chili powder or use orange juice instead of lime.

Drink pairing: 1 part White Wine muddled with strawberries, lemon and mint. Pour over ice and top with seltzer

Mocktail pairing: Strawberries, lemon and mint muddled with 2 oz simple syrup. Add ice and top with seltzer.

¼ cup Olive Oil

¼ Cup Lime Juice

2 Tablespoons Fresh Ginger Paste

1 Tablespoon Agave

1 teaspoon salt

Place the lime juice in a large bowl.

Slowly drizzle in the olive oil while whisking. Continue to whisk until the dressing becomes thick.

Add your ginger paste, agave and salt. Stir until combined.

Will keep for 2 weeks in your refrigerator.
