Lentil Stew

8 Ingredients


Prep Time: 10 minutes

Cook Time: 20 minutes


1 Tablespoon Olive Oil

¼ cup Onion- Small Diced

¼ cup Carrots- Rounds, 1 cm thick

¼ cup Celery- Small Diced

1 cup Small Yellow Potatoes- Cut in half

1 cup Lentils

4 cups Vegetable Stock

½ teaspoon Old Bay Spice Blend (Optional)

1 Tablespoon Parsley Leaves-fresh (optional)


1. Place olive oil in a small stock pot. Turn heat to medium.

2. Once the oil starts to smell fragrant, add the carrots, celery and onion. Stir. If the onions start to turn brown, reduce the heat.

3. Allow the vegetables to cook until they start to become soft.

4. Add the lentils, potatoes and stock to the pot. Turn heat to high.

5. Once the liquid boils, reduce heat to a simmer.

6. Allow to simmer until lentils and potatoes are soft. Add old bay.

7. Garnish with parsley.
