Sonoran Pecan Pie

Prep Time: 1 hour

Cook time: 45 minutes

Chill time: 6 hours

Crust


1 Cup Flour

¼ Cup Sugar

½ teaspoon Hot New Mexico Chili Pepper Powder

¼ teaspoon Salt

8 Tablespoons Butter

1 Egg

½ Cup Green Valley Pecan Meal


Preheat oven to 350°F


1. Place flour, sugar, salt and chili powder in a bowl and mix together.

2. Add butter and cut with a fork until coarse crumbs are formed.

3. In a separate bowl, beat the egg until slightly frothy. Add egg to the flour mixture and work together with your hands until it forms into a ball. It should feel soft, but not sticky. Place into the refrigerator for one hour. 

4. On your work surface, sprinkle a little of the Green Valley Pecan Meal and place your dough on top. Slowly start to roll out your dough. Once your dough begins to flatten out, sprinkle on more Green Valley Pecan Meal. Continue to sprinkle and roll out your dough until the entire ½ cup of Green Valley Pecan Meal is incorporated in. Carefully lift off your dough and place into a 9.5 inch pie pan.

5. Place a piece of parchment paper on top of your pie crust. Add pie weights or dried beans on top. Place in a 350°F oven and bake for 10 to 15 minutes. The crust will be done when it feels firm to the touch. Remove from the oven and allow to cool.


Filling


1 Cup Dark Corn Syrup

⅔ Cup Brown Sugar

¼ teaspoon Chipotle Chili Powder

⅛ teaspoon Black Pepper

¼ teaspoon Hot New Mexico Chili Pepper Powder

½ teaspoon Pasilla Chili Powder

¼ teaspoon Salt

⅓ Cup Butter- melted

3 Eggs

1 Cup Green Valley Pecan Pieces


1. Beat corn syrup, sugar, spices, salt, butter and eggs together until slightly frothy and sugar is dissolved. 

2. Stir in the Green Valley Pecan Pieces with a spoon until coated.

3. Pour into your prebaked pie shell. 


Toppings and Baking 


3 Jalapeños

¼ Green Valley Baking Pieces

½ Cup Green Pecan Halves

(optional ½ fresh lime and ½ teaspoon cayenne)


1. Place your jalapeños over an open flame and allow the skin to turn black. Once cooled, gently peel off the jalapeño skins. Slice in half and remove the seeds.

2. Sprinkle the Green Valley Pecan Baking Pieces on top of the pie filling. 

3. Place the jalapeños on top of the filling.

4. Arrange the Green Valley Pecan Halves on top of the filling around the jalapeños.

5. Place the pie into a 350°F oven and bake until the center does not wiggle when moved. About 40-50 minutes.

6. When hot from the oven, squeeze the lime juice over top and sprinkle with cayenne. (optional)

7. Allow to cool completely in the refrigerator before slicing. 4 to 6 hours
