Watermelon Bowl with Hatch Chili Peach Syrup

Who can resist diving into a bowl of fresh watermelon! Add any type of fruit you like to the base recipe. Hatch chili adds just a whisper of heat to this refreshing summertime treat.

1 Standard Can Peaches (In natural juice)

2 Cups Diced Watermelon

1 Cup Fresh Fruit of Your Choice

1 Small Hatch Chili

Tajin*

Drain the peaches of their juice into a small sauce pan. Reserve the peaches.

Cut off a one inch section of the hatch chili and place into the sauce pan with the peach juice.

Boil the juice until it thickens into a syrup.

Place the watermelon, canned peaches,**and fresh fruit into a bowl.

Pour the syrup over the fruit.

Dice the remaining hatch chili and sprinkle it over the fruit with syrup.

Sprinkle with Tajin.

*Tajin is optional.

**You can use the peaches in the watermelon bowl or reserve for your lunch box. Pictured here is with the canned peaches reserved.
